Using the cookie dough creatively is my favorite aspect of preparing these ice cream sandwiches. And before constructing the ice cream sandwiches, flash-freeze your cookies for around 15 minutes to avoid a melty disaster.

In order to maintain the sandwiches’ form, this hardens the cookies. Try these two more ice cream recipes: Protein Ice Cream and Three Ingredient Ice Cream.

Two cups of flour for all purposes

  • 1/2 teaspoon of baking powder
  • Bake soda, 1/2 tsp.
  • 1/4 teaspoon salt
  • 3/4 cup softened butter.
  • 1/3 cup of sugar
  • Just one egg
  • A teaspoon of vanilla essence
  • Half a cup of tiny chocolate chips

4-cups mildly softened strawberry ice cream

Preheat the oven to 350°F. Put parchment paper over the rim of baking sheets. Stir together flour, baking soda, baking powder, and salt. Beat butter and sugar together till creamy on medium speed.

Beat in vanilla and egg. Beat in flour mixture and chocolate chips on low speed. Separate into sixteen equal halves. Set apart on baking sheets by 2″. After around ten minutes, bake until golden. Allow to cool for five minutes. Move to a rack and allow to rest.

• Line rimmed baking sheet with parchment paper. Scoop 1/2 cup ice cream over flat side of each of 8 cookies. Press on remaining cookies. Transfer to baking sheet. Put it in freeze.
